 1 can of Black Beans, no salt added, rinsed and drained
 2 Eggs
 ½ cup melted coconut oil
  cup melted butter (optional)
 ½ cup cocoa powder
 1 tsp real vanilla or vanilla bean
 ¼ cup real maple syrup (or other sweetener, honey, agave, brown sugar)
 ¼ cup Stevia (granulated, or Stevia/Erythritol granulated)
 ¼ tsp Sea Salt
 2 tsp baking powder
 ¼ cup chocolate chips (or alternative like dark chocolate pieces)

This recipe is super easy, as you can simply blend all of the ingredients in a food processor. Preheat oven to 350°F. Grease mini muffin tray or 8x8 square with butter. Blend all ingredients together until smooth. Spoon or pour into baking trays. Sprinkle with chocolate chips. Or mix them right in. Turn them into cupcakes with a slightly sweetened cream cheese frosting. Bake until set or toothpick comes out clean, about 20-25 minutes for mini muffins, 25-30 minutes for a square pan.
