Super delicious healthy brownies made with black beans! Gluten free and delicious!
1can of Black Beans, no salt added, rinsed and drained
½cupmelted coconut oil
⅓cupmelted butter (optional)
1tspreal vanilla or vanilla bean
¼cupreal maple syrup (or other sweetener, honey, agave, brown sugar)
¼cupStevia (granulated, or Stevia/Erythritol granulated)
¼cupchocolate chips (or alternative like dark chocolate pieces)
This recipe is super easy, as you can simply blend all of the ingredients in a food processor. Preheat oven to 350°F. Grease mini muffin tray or 8x8 square with butter. Blend all ingredients together until smooth. Spoon or pour into baking trays. Sprinkle with chocolate chips. Or mix them right in. Turn them into cupcakes with a slightly sweetened cream cheese frosting. Bake until set or toothpick comes out clean, about 20-25 minutes for mini muffins, 25-30 minutes for a square pan.
