Super delicious healthy brownies made with black beans! Gluten free and delicious!
Black Bean Brownies
These Black Bean Brownies quickly became my go-to for parties and special events. I just love treats that utilize a secret special ingredient. Often I will just let people try them before telling them what they're made with. Shock and amazement is usually the reaction I get, followed by a request for the recipe. The coconut oil adds a nice flavour and offers a healthier alternative to other oils often used in baking. This is one simple switch that is easy in baking. Use coconut oil in any muffin recipe that calls for canola or vegetable oil. I go through A LOT of coconut oil, like Nutiva Organic Coconut Oil
Like any health or food "craze", it becomes popular and then comes under scrutiny. The same thing is happening with coconut oil it seems. Some are saying that because it is a high (healthy) fat oil, it can be worse for some people...namely, those who already have pre-existing heart conditions. Well, guess what? Years of poor diet and lack of healthy habits leads to clogged arteries...not just a bit of coconut oil.
Try using Stevia in place of sugars, for an even healthier version!

This is my current fav food processor. Cuisinart Prep 11 Plus 11-Cup Food Processor
This recipe is super easy, as you can simply blend all of the ingredients in a food processor. Preheat oven to 350°F. Grease mini muffin tray or 8x8 square with butter. Blend all ingredients together until smooth. Spoon or pour into baking trays. Sprinkle with chocolate chips. Or mix them right in. Turn them into cupcakes with a slightly sweetened cream cheese frosting. Bake until set or toothpick comes out clean, about 20-25 minutes for mini muffins, 25-30 minutes for a square pan.

Yes, with a good blender and maybe use a bit of extra oil, and a few tablespoons of chocolate almond milk as needed, just to make sure it blends.

Oh gosh I made black bean brownies once and they were awful! I’m not completely scared of trying it again but definitely skeptical! Do they always taste really beany? Yours look good!
I don’t find them “beany” at all. I think the coconut oil helps with that. You could also try adding maple syrup, or natural peanut butter, or a few chocolate chips to ensure more sweetness.
