How to Make Your Own “Lara-Like” Bars

I’m posting this recipe under Quick Trick, because that’s really what it is. A quick and cheap trick…for making your own Lara-like bars. I whipped these up yesterday in 5 minutes.

Simply throw dates in a food processor and turn it on, then turn around to grab a couple ingredients to throw in. Stop the processor, have a peak at the dates. Not broken up enough, keep processing! For these ones, I added two BIG tablespoons of natural peanut butter. Blend again. Then a handful of peanuts. Add the nuts last to maintain some texture, otherwise the nuts will just pulverize in the processor.

It will look like crumbled dough or dirt…however you want to think of it. Press into parchment paper in a tray and refrigerate. Make in small batches to ensure that your food processor can handle the job. This was about 20 dates and made enough for a loaf pan, which can be cut into 5 full length bars or 10 squares.

Happily discovered that it turned out soft enough for toddler to eat. While I was eating one the next day, the littlest one was at my feet ready to sample and he loved it!

Count the ingredients with me: 1. Dates  2. Natural peanut butter, which is just peanuts!  3. Peanuts   That’s it! Just 3 ingredients!

Be creative with your ingredients! My other favourite: Dates, Lime juice, coconut and peanuts!

TIPS: Soak your dates in water for a minutes before adding to the processor. Drain all but 1-2 tbsps of the water.

Keep refrigerated. Wrap a few up for a grab-n-go snack.
