Avocado, Pudding and Baby Food

Avocado has the most perfect creamy texture for this pudding! It reminds me of making baby food. Avocado adds healthy fats and creamy texture for making homemade baby food!

Healthy Chocolate Pudding

“Hey Mommy! I want chocolate pudding!” He says to me one day, much to my horror… We’ve never had chocolate pudding before, how does he know to ask for it, I thought. How does he know what is it?! Then I discovered, so and so always has a chocolate pudding cup in their lunch. Why don’t I get chocolate pudding in my lunch?!  I simply reply, well sweetie, it has lots of sugar in it and isn’t the healthiest option. Seems sufficient…for now…but the request came again. I began to think, a homemade version of a box of chocolate pudding, couldn’t be too bad…made the right way, with the right ingredients. And as we Moms seem to have some underlying force that seeks to please our children and fulfill their wishes, I decided I would try to make a healthy homemade chocolate pudding. I searched for some recipes and began experimenting.

The first attempt was chocolate chia seed pudding. Well that didn’t go over well, and I believe it was mainly a texture issue. However, my toddler did eat it. So somebody liked it!

Second attempt, I decided to get the texture right, so chia seeds are out unfortunately. Avocado is in! In a food processor, I combined 2 small avocados, 1 banana, 1/4 cup natural peanut butter, slightly less than 1/4 cup cocoa powder and about 5 tablespoons of maple syrup. The results I thought were amazing! A smooth, creamy texture, beautiful brown colour and awesome taste! Well, he still didn’t like it! So I said, well I guess you don’t like chocolate pudding then, because THAT’S chocolate pudding! It tasted just like it should, or so I thought at least. And of course, the littlest one gobbled it up with much approval.  I might try using a frozen banana next time, for a cool ice-cream-like texture.

At least I thought outside of the chocolate pudding box!
